Chicken Burritos

Ingredients

(Makes 8 servings)

One cup brown rice
One pack of carb-cutting tortillas
One half packet taco seasoning
One medium onion
Green and red bell peppers (one each)
2 chicken breasts, diced
Small container Greek yogurt
One can of black beans, rinsed
Old El Paso Creamy Queso Sauce (optional)

Instructions

Rinse rice until it runs clear (to remove starches) and cook rice as directed.
Cut peppers and onion in strips.
Dice raw chicken breasts.
Spray large pan or wok with vegetable oil (or use olive oil).
Heat pan to medium high.
Add chicken to pan and flip when it gets white around the edges.
Once chicken is brown on both sides, add onion and peppers to pan.
Add two tablespoons of water and half packet of taco seasoning to pan.
Reduce heat to medium and let simmer.
Rinse black beans in strainer and put in microwave-safe container. Season beans as desired and microwave until warm.
Build burritos using tortilla, black beans, rice, chicken mixture, Greek yogurt, and cheese sauce as desired.
